Hederman Smoke House, situated on the estuary shores of the Lee, welcomes CRAICLY STORIES for a lively, storyful evening in celebration of Ireland’s only smoke house, local fishing,Cork market traditions, and global sea-farers.
Delving into subjects as diverse as smoked seafood, coastal communities, maritime memories and sailing adventures, it promises to be an evening of personal stories, searing honesty, wit and repartee.
A cured and smoked ‘fish supper’ of Hederman’s finest produce, followed by post-prandial stories from a selection of tellers to include Frank Hederman, Jane Gormley, CRAICLY founder, Cork sailor Rom Hyde and special guest Cónal Creedon, renowned writer, playwright and film maker - and proud Cork man

The evening planned in Hederman Smoke House will bring “Sea Stories served on a Smoked Platter!” An intimate and lively evening show-casing some of Ireland’s finest artisanal seafood products from Frank and Caroline’s smokehouse. After a three-course shared seafood supper, we will enjoy some Irish storytelling with personal memoir style tales revolving around the sea.
Smoked Fish Platter in Hederman Smoke House
Tellers will include Frank Hederman, Jane Gormley, Rom Hyde and Cónal Creedon. Cónal, a proud Cork man whose multiple literary works are drawn from his and his family's deep relationship with Cork City traders, winning him international acclaim and multiple awards - including the Leonardo De Vinci World Awards of Arts in 2024, and Pride of Cork in 2025.
HEDERMAN SMOKE HOUSE. (Established 1982). Located on the estuary of a wild salmon fishing river, Hederman Smoke House, Co Cork, is the only traditional timber smoke house in Ireland – and one of only a handful worldwide. Here they hang Irish Atlantic salmon for cold smoking – unlike any other smoker in Ireland. The smoke house’s seasoned walls and smoking technique are so rare in fact that European laws now protect this modest building and its unique method, which produces smoked fish of unparalleled quality, year round.
All of the smoke house fish is of Irish origin, from humble mackerel, and smoked haddock to ultra-rare smoked eel from Lough Neagh and smoked wild Irish Atlantic Salmon. “Frank Hederman smokes fish”, said the NYT, “… which is a little like saying Steinway makes pianos”. Since 2021, Frank and Caroline have developed the premises to include an inviting Tasting Room, courtyard and walled garden, where they now host convivial and delicious lunches and supper as an integral part of immersive tours. This is the first time they have hosted a CRAICLY STORIES event, although, almost needless to say, Frank has performed before!
BRIAN’S WINES: An independent wine importer, based in Cork City. Brian’s wines regularly hosts evenings in their Cornmarket Street wine bar. Interesting cultural gigs, visiting chefs, wine tastings, gigs and a regular wine club! Brian will be bringing a curated selection of wine to accompany the fish supper for guests to purchase.
